Combine ingredients (leaving aside 1/4 cup of coconut for rolling) into a food processor and mix for approx. 30 Seconds or until ingredients start to form a dough like consistency.
Divide out and roll into 25 balls
Keep refrigerated
Warning: I would encourage you to keep these frozen or you might just find yourself standing in the fridge for extended periods of time!
