French Toast With Coconut Banana Caramel

Ingredients

  • 2 x Gluten Free Toast
  • 1/2 cup Egg Whites
  • 1 tbsp Setvia Powdered
  • 1 tsp Brown Sugar
  • 1 tbsp Low Fat Margarine
  • 1/2 tsp Cinnamon
  • 2 pinches Salt
  • 80g Fresh Banana
  • 25g Blueberry
  • 10g Coconut

Instructions

Step 1

Combine egg whites with stevia and  cinnamon using  whisk or fork. Dip the slices of bread one at a time into the egg white mixture and allow to rest until all the liquid has completely soaked up.

Step 2

Heat a non stick fry pan then place the slices of bread and cook until the bread begins to brown lightly.

Meanwhile, in a microwave safe bowl, place the margarine and brown sugar and salt and heat until melted then remove from microwave and set aside.

Step 3

Slice banana lengthways and fry for 1 minute each side.

Step 4

Lay the slices of bread on a serving plate, top with blueberries and banana, drizzle over the caramel sauce and sprinkle with coconut to serve.

*I like to serve mine with a high protein ice-cream or a helping of natural no fat plain yoghurt sweetened with stevia.
