Combine all ingredients in a food processor to beat with electric mixer until well combined. Leave to sit for a 5 minutes.
Heat a non stick fry pan on medium heat, spray once over with oil of choice, then divide mixture into 6 medium size pancakes.
If I am having pancakes for my pre workout meal (I try to consume approx. ~50g carbs) to ensure I have plenty of energy for my session.
